It's Grilling Season!

We’re not sure if it’s the pandemic (everyone is cooking at home these days!), the beautiful evening weather or if it’s just that time of year…  we’re seeing so many grills going out the doors in our retail stores. We think it’s the perfect time to share a few of our favorite recipes and grilling accessories.  Our family’s goal with grilling is to Keep It Simple!

Growing up, Jalapeno Poppers on the grill were the quintessential appetizers that kicked off Spring and Summer AND they’re SO easy! My own family has come to love these, even my pickiest that I thought would NEVER touch a jalapeno!

Grilled Jalapeno Poppers

Ingredients:

  • 6 large jalapenos sliced lengthwise, seed and ribs removed

  • 8 ounces softened cream cheese

  • 1/2 teaspoon salt

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 6 strips bacon cult in half

Instructions:

  1. Prepare charcoal grill to medium heat (or gas grill.)

  2. Pre-cook bacon on a paper towel lined plate in the microwave for 2 minutes.

  3. Combine cream cheese with garlic, onion powder and salt.

  4. Fill the cavity of each jalapeno with the cream cheese mixture.

  5. Wrap a slice of bacon around each jalapeno. You can secure it with a toothpick if needed.

  6. Place on grill over direct heat, for 10-15 minutes, or until bacon is crispy on the bottom. 


Street Tacos are another weekly meal in our household that are perfect on the grill.  I love them because there is so little clean-up, everyone else loves them because we always make a ton and leftovers are great for lunch over the next few days..

Ancho Chili Steak Tacos (Big Green Egg)

Ingredients:

  • Flank Steak

  • Big Green Egg Ancho Chile & Coffee Seasoning

  • Big Green Egg Cayenne Hot Sauces

  • 1 Large Red Onion

  • 4 Jalapeno Peppers

  • Soft Flour Tortillas

Instructions:

  1. Set the EGG for direct cooking at 400F

  2. Cut the onion in half and grill with the jalapeno until desired doneness.

  3. Season the steak with the Big Green Egg Ancho Chile & Coffee Seasoning.  Grill the flank steak for 2 minutes per side; reset for 2 minutes and then slice thin.

  4. Warm the tortillas on the top sliding grid.  On each tortilla, add meat and top with the onions.  Serve the tacos w sauce on the side.
